Is it relatively easy to move files over from a VPS to a dedicated server? What if you are not using the same hosting company - would this cause additional issues?

If you are using a V.P.S. with a control panel and are in the correct environment and wish to move to a Dynamic Dedicated Server then the answer is yes.
A D.D.S. allows you to have SLM resources which are expandable such as disk space and memory limitations.
